Maestro Francisco Ortiz is a 3rd generation Mezcal producer. Espadin agave is sustainably farmed on our estate in the region of San Luis del Rio, harvested at full maturation (aged 7-8 years). The process begins by cooking the hearts of the agave for up to 10 days in an underground oven using local oak wood. The cooked hearts are then crushed with a tahona pulled by the estate’s donkey chicharito. Kalani is made by fermenting coconut milk and macerating it in Mexican sugar Cane Rum. It is made with coconuts from a traditional colonial plantation called OXTAPACAB in the Yucatan. Originally a Dutch sisal factory for rope making, OXTAPACAB established in 1891 is now the organic source of Yellow Dwarf coconut milk for Kalani.The yellow Dwarf are grown from seeds until they are 2 months old and established. Once matured they are moved into the plantation. They are pollinated by the stingless Mayan Bees to produce coconuts which are rich in milk. The harvested coconuts are then shelled using a 'desconchadora', a spiked wheel, then cleaned with a knife.The white flesh is crushed, flaked and shredded. The shredded coconut is wrapped into a cloth and pressed to remove all the milk which is then immediately refrigerated and sent to Casa D Aristi exclusively for Kalani. Casa D Aristi receives the 100% natural coconut milk and heats it before filtering and adding to the Mexican Sugar Cane Rum. Gin Katún is the first handcrafted Gin developed in Yucatán. A unique and completely Mexican Gin made with botanical ingredients and vested in time. After combining 17 botanical ingredients, sourced mostly from Yucatán and selected from other parts of Mexico (with the exception of juniper, which is the sole imported ingredient), the blend is macerated in corn neutral alcohol for at least ten days. Batanga Tequila 100% Agave Blanco 700ml
Casa Orendain was established in 1926 by Don Eduardo Orendain and is considered one of the four oldest tequila families and actual founder (among Cuervo, Sauza & Herradura) of the Tequila industry. Batanga Tequila is traditionally distilled using 100% agave grown on one estate in the heart of Jalisco Mexico. Only the best agaves are used, all the agave is harvested in the Tequilla Vallery and exclusively in the Orendain plantation. The pinas are traditionally baked using brick ovens to guarantee taste and flavour profile and then the fermentation process begins, the yeast is produced locally at the distillery using the original formula from over 80 years ago.

Batanga Tequila is traditionally distilled using 100% agave grown on one estate in the heart of Jalisco in Mexico. Only the best agave is used, the piñas are traditionally backed using brick ovens to guarantee the taste and flavour profile followed by fermentation. The yeast is produced locally at the distillery using the original formula from over 80 years ago. Only pot stills with an internal coverage of copper in the coil are used in the process. For maturation only ex-Bourbon barrels are used. Rested for a minimum of 4 - 6 months which is double the minimum time required (2 months).
